{ Beet Greens Smoothie }
Beets for breakfast? Yes please! Nurture your immune system with this delicious (and nutritious!) smoothie. Using both the earthy beetroot and leafy greens, this boosting beverage is a tasty way to enjoy those CSA beet bunches.
This is also a great way to use up those leftover beet bunches kicking around in your refrigerator, or to make a quick meal to eat on the go!

Beet Greens Smoothie
Servings: 2 people
Ingredients
- 1 cup cooked or raw beets, chopped
- 1 cup beet greens, cleaned
- 1 - 1 1/2 cup Greek yogurt
- 1 - 1 1/2 cup mixed frozen berries (strawberries, saskatoons, raspberries)
- 1 tbsp honey
Instructions
- Combine all ingredient into a blender and mix until smooth. If necessary, add a few splashes of water to get the smoothie to blend.
