Saskatoon Vinaigrette
Delicious and tangy salad dressing.
Servings: 1 cup
- 1/2 cup saskatoon berries
- 2 tbsp red wine vinegar
- 1/4 cup olive oil
- 2 tbsp honey
- 1 tsp fresh thyme, chopped (optional)
- pinch salt
Combine berries and vinegar in a small saucepan and bring to a boil. Boil for 3 minutes. Remove from heat and allow to cool.
Using food processor or hand blender, whiz together vinegar berries with remaining ingredients until smooth and incorporated. Add 1 tsp. water to thin if desired.
Drizzle over salad, or store in refrigerator for up to one week.
