{ Tangy Saskatoon Vinaigrette }
Our saskatoon berries were abundant this year– the picking was great here at the farm!
One of the many ways we enjoy our fresh saskatoons is tossed in a mixed greens salad (pictured is a combo of torn beet greens, kale, and butter lettuce leaves), sprinkled with pumpkin seeds (substitute your favourite nut or seed), and drizzled with homemade Saskatoon salad dressing! Delish.
Saskatoon Vinaigrette
Delicious and tangy salad dressing.
Servings: 1 cup
Ingredients
- 1/2 cup saskatoon berries
- 2 tbsp red wine vinegar
- 1/4 cup olive oil
- 2 tbsp honey
- 1 tsp fresh thyme, chopped (optional)
- pinch salt
Instructions
- Combine berries and vinegar in a small saucepan and bring to a boil. Boil for 3 minutes. Remove from heat and allow to cool.
- Using food processor or hand blender, whiz together vinegar berries with remaining ingredients until smooth and incorporated. Add 1 tsp. water to thin if desired.
- Drizzle over salad, or store in refrigerator for up to one week.
