{ Celeriac Fries with Lemon Garlic Dip }
Celeriac, that knobby, bulbous root vegetable with a distinctive celery flavour, wins the prize for ugliest vegetable. But don’t let its looks deceive you; it’s flavour is mellow and comforting with subtle sweet undertones when cooked. Simply peel the brown outer skin with a vegetable peeler to reveal the edible white centre. Then slice it into strips and make this appetizing side!
As with any roasted vegetable, these fries, when coated with oil and baked, take on a delicious caramelized flavour with a crisp exterior. And the creamy garlic dip takes them to the next level with just four simple ingredients. You’ll be glad you added this to your supper menu tonight!

CELERIAC FRIES WITH GARLIC DIP
Ingredients
- 2 lg celeriac, trimmed and peeled
- 1 tbsp oil
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 4 tbsp fresh chopped parsley, divided
- Flakey sea salt + freshly ground pepper, to taste
Instructions
- Preheat the oven to 425 F. Line a large baking sheet with parchment paper.
- Use a sharp knife to slice the celeriac into ½” strips. Add them to a bowl and toss with oil.
- Spread the celeriac in a single layer on the prepared baking sheet. Make sure the strips aren’t overlapping.
- Bake for 25-35 minutes. Check on the fries every 5-8 minutes after the 25 minute mark.
- Meanwhile, whisk together the mayonnaise, garlic, 2 tbsp parsley and lemon juice. Season with salt and pepper.
- Remove fries from the oven when they are browned and looking reduced in size. Sprinkle with sea salt and fresh parsley. Serve immediately with garlic dip.
