{ Garlic Miso Roasted Radishes }

One of the those early garden delights we all look forward to is the crunchy, peppery radish. Our first round of radish seeds we planted this year didn’t germinate due to a bad batch of seed, so we are sadly STILL waiting to share this bright-coloured bounty with our CSA members.

Did you know you could roast radishes? Many people have never tasted them in any form other than raw (and sometimes pickled)– we sure hadn’t until we moved to the farm!

Cooking radishes takes away the spicy bite in them, leaving you instead with a sweet, subtle flavour like that of a young turnip. Add in a bit of garlic, lemon juice, and savoury miso paste as this recipe suggests, and you have a fresh delight for the senses! Give it a try and see for yourself– these flavourful little fellas do not disappoint.

Garlic Miso Roasted Radishes

Ingredients

  • 1 lb radishes, cleaned aand trimmed (cut large radishes into halves or quarters depending on size)
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp miso paste
  • 1 tbsp fresh parsley, finely chopped (or 1 tsp dried)
  • salt and pepper to taste

Instructions

  • Preheat the oven to 425°F.
  • In a large bowl, whisk together olive oil, garlic, lemon juice, miso paste and salt and pepper.
  • Add the radish in the bowl and toss until they are evenly coated with the dressing.
  • Transfer onto a parchment lined baking sheet and bake for 20 minutes, turning them halfway through the roasting process, until golden brown. Season with salt and garnish with parsley.
